Ingredients:
8oz/200g chick peas, soaked for 24 hours (retain 5 fl. oz of the liquid)4 tbsp tahini5 fl.oz/150ml olive oil4 gloves garlicjuice of a lemon1oz/25g parsley, finely chopped
6 sticks celery3 carrots1 red pepper
Directions: In a food processor combine the soaked chick peas, tahini, half of the olive oil, half of the retained chick pea liquid, garlic and lemon juice. Taste. Add more olive oil/chick pea liquid as required. Process until smooth. Garnish with the chopped parsley. Wash and chop the vegetables into sticks and use these to dip into the hummus. Suitable replacements include broccoli, cauliflower, etc. Serves 2 people.
